WHAT
YOU NEED:
- 2 tablespoons of golden syrup
- 5 tablespoons of white sugar
- 1 teaspoon of baking soda
WHAT TO DO:
Now it’s important to be extremely careful with
hokey pokey, because it’s super hot! So you’ll definitely need an oldie around
to help you out. So to make Hokey Pokey, this is what you’ve gotta do:
1. Combine sugar and golden syrup in a pot and
stir over a low heat until sugar is dissolved.
2. Turn up heat and bring to a boil. Remove from
heat as soon as mixture boils.
3. Add baking soda. Mixture will froth up at
this stage (The bicarbonate of soda breaks down with heat to release carbon
dioxide gas. The gas causes the toffee mixture to froth and the gas becomes
trapped in the sugar/syrup mixture)
4. Stir quickly to make sure it is all combined
and then turn out on to a greased tray. (USE OVEN MITTS)
